Chocolate Pumpkin Zucchini Bread

No overpowering pumpkin flavor, no added oil, and just a smidge of sugar—it’s basically a guilt-free indulgence, right? Perfect for those moments when you want something tasty without all the extra fuss.

Ingredients

  • 2 ½ cups whole wheat pastry flour Bob's Red Mill
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup Stevia or granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 can can pumpkin
  • 1 ½ tsp vanilla extract
  • 3 cups shredded zucchini
  • 1 cup dark chocolate chips

Instructions

  • Preheat the oven to 350℉.
  • Grease two 8×4-inch loaf pans or 2 regular size muffin pans.
  • Shred the zucchini. I use a food processor, but you can do it with a hand grater. **Note: You don’t need to peel the zucchini unless you use a very large garden zucchini with thick skin. If needed, use a spoon to scrape out the seeds.
  • In a large bowl, whisk sugar, brown sugar, eggs, canned pumpkin, and vanilla.
  • Add flour, cocoa powder, baking soda, baking powder, and salt and stir just until moistened.
  • Fold in the zucchini and chocolate chips. Don’t overmix.
  • Divide the batter into the two loaf pans and bake for 45 to 55 min (20 min for muffins) or until a toothpick comes out clean.
  • Transfer the bread or muffins to a wire rack to cool completely.

Notes

Just a heads up: make sure to check the middle to ensure they’re fully baked through—no one likes an undercooked surprise (unless it’s chocolate, of course).
You can store them in the fridge in a zip-top bag for up to a week—if they don’t disappear before then! On the counter, they’ll only last a few days.
And for those ‘treat-yourself-later’ moments, freeze any extra muffins or half a loaf to enjoy later on.
